My richly flavorful homemade poutine gravy recipe is perfect for slathering over a bed of crispy French fries topped with melty cheese curds.
Poutine is a Canadian specialty, also commonly found in the Upper Peninsula of Michigan, as well as Wisconsin. Which makes sense, as Wisconsin looks for any excuse to serve food with cheese curds. This comforting side dish features hot fries bathed in a rich brown gravy and cheese curds. Enjoy comfort food at its finest, for those long northern winters!

Ingredients & Substitutions
- Butter
- All-purpose flour
- Beef broth
- Chicken broth
- Worcestershire sauce
- Fresh ground black pepper
- Garlic powder
- Onion powder
- French fries - You can use frozen or homemade French fries.
- Cheese curds - Fresh white Cheddar curds are traditional, but Deep-fried cheese curds can also be used.

How to make it
Make this homemade poutine gravy recipe by first melting the butter in a small saucepan set over medium-low heat. Once the butter has melted, whisk in the flour. Continue to whisk until the mixture turns a light brown.
Slowly add the chicken and beef broth in batches, while continuing to whisk. Ensure the liquid fully blends into the flour mixture before adding more, to prevent lumps from forming.
Next, add the Worcestershire sauce, black pepper, onion powder, and garlic powder. Bring the gravy to a simmer and cook until it thickens into a gravy consistency. Taste for salt and adjust as needed.
Pour gravy over homemade fries, and top with cheese curds.

Storing and Reheating Leftover
Leftover poutine gravy stores well in the refrigerator for up to one week when kept in an airtight container. Since it reheats easily on the stovetop or in the microwave, you can also prepare it in advance, if needed. French fries won't keep well in the refrigerator, so it is always recommended to serve this gravy over fresh fries.
