    You would expect to find a gourmet roast beef sandwich like this served at a refined lunch bistro, but it is easy for anyone to make at home!

    This delicious roast beef sandwich recipe gets piled high with premium deli roast beef, arugula, pickled onions, sweet peppers, and gouda cheese, then served on a hearty pretzel bun with a generous smear of horseradish mustard.

    Ingredients & Substitutions

    • Pretzel buns - Brioche buns or your favorite fresh bakery buns can be substituted.
    • Fresh arugula - You can substitute your favorite lettuce or fresh greens.
    • Deli roast beef - You can also make this sandwich with leftover roast beef (I would prefer to use that for hot roast beef sandwiches), but I recommend using premium deli roast beef from your grocery store deli counter.
    • Roasted peppers in oil
    • Aged gouda - My recommended substitutions would be regular gouda cheese, blue cheese, provolone, Monterey Jack, or sharp Cheddar cheese.
    • Pickled red onions - You can just use sliced raw onions, but pickled onions add a wonderfully sharp tanginess.
    • Mayonnaise
    • Prepared horseradish 
    • Dijon mustard - Any stone ground mustard or brown mustard can be substituted.

    How to make it

    Making this cold roast beef sandwich recipe is easy. Begin by adding the mayo, horseradish, and mustard together in a small bowl. Mix well to combine.

    For the best texture, I recommend toasting the pretzel rolls. This not only provides a satisfying crunch when you bite into your sandwich, but it also lightens the bun's texture so it isn't disproportionately dense.

    Assemble the sandwich by placing arugula on the bottom bun, then topping it with roast beef, sliced peppers, cheese, and pickled onions. Spread your creamy horseradish sauce on the upper bun, then top and serve this delicious sandwich with half-sour pickles.

    Storing Leftovers

    Roast beef sandwiches are popular to pack for lunches and can be made the night prior. However, the buns don't store well in the refrigerator for extended periods of time. So you can expect the texture to suffer a little. All of the remaining ingredients will store well refrigerated in an airtight container.

    For the best flavor, store the buns at room temperature and assemble the sandwich immediately prior to eating.

    Ingredients

    • 4 pretzel buns
    • 1 cup arugula
    • 1 pound sliced deli roast beef
    • ¼ cup roasted peppers in oil sliced
    • 4 slices aged gouda
    • ½ cup pickled red onion thinly sliced

    Creamy Horseradish Mustard

    • 2 tablespoons mayonnaise
    • 1 tablespoons prepared horseradish or to taste
    • 1 tablespoon Dijon mustard

    Instructions

    • Slice the pretzel buns in half and toast the interiors.
    • Assemble the sandwich by spreading arugula across the bottom bun, then top with sliced roast beef, peppers, a slice of cheese, and pickled onion.
    • Combine mayo, horseradish, and Dijon in a small dish, then spread across the inside of the top bun. Then place it on the sandwich and serve immediately.

    Notes

    To make pickled red onions, you can simply soak thinly sliced red onions in apple cider vinegar, or follow my quick-pickled red onions recipe. The thinner the onion slices are, the faster they pickle.
