Roast Beef Sandwich
You would expect to find a gourmet roast beef sandwich like this served at a refined lunch bistro, but it is easy for anyone to make at home.

- 4 pretzel buns
- 1 cup arugula
- 1 pound sliced deli roast beef
- ¼ cup roasted peppers in oil sliced
- 4 slices aged gouda
- ½ cup pickled red onion thinly sliced
Creamy Horseradish Mustard
Slice the pretzel buns in half and toast the interiors.
Assemble the sandwich by spreading arugula across the bottom bun, then top with sliced roast beef, peppers, a slice of cheese, and pickled onion.
Combine mayo, horseradish, and Dijon in a small dish, then spread across the inside of the top bun. Then place it on the sandwich and serve immediately.
To make pickled red onions, you can simply soak thinly sliced red onions in apple cider vinegar, or follow my quick-pickled red onions recipe. The thinner the onion slices are, the faster they pickle.
