I was craving a healthy lunch last week and this Veggie Hummus Pita Sandwich totally hit the spot! I’ve been enjoying pita sandwiches since I was a child, when my mom would make them for us. However, rather than being slathered in mayo and loaded with processed deli meats, this version is completely vegetarian.
My mother would approve.
Don’t worry, I’m not turning this into a vegetarian blog anytime soon. However, I do really enjoy vegetarian meals on occasion. I think us omnivores often get lazy with our cooking sometimes and rely excessively on fats for flavor, whereas vegetarian meals are often more culinarily interesting in terms of texture of fresh flavors.
Yes, I know… But our brains REALLY love those fats!

If you want a little tip to make better pita sandwiches. I microwave my pitas for 8 seconds or so. It softens them up and makes them slightly more pliable. This is an optional step, but a worthwhile one.

- 1 pita pocket
- 3 tbsp hummus
- 6 slices cucumber
- 6 slices vine ripened tomato
- 1 radish, thinly sliced
- 1/4 cup alfalfa sprouts
Cut pita pocket in half lengthwise to expose the inner pocket.
Liberally slather hummus inside each pocket, then top with remaining ingredients. Ensure they are spread out for even coverage.
