    Veggie Hummus Pita Sandwich Recipe - Healthy, Flavorful, Vegetarian

    This flavorful Veggie Hummus Pita Sandwich is a filling lunch you don't need to feel bad about. Bursting with crisp vegetables and slathered with creamy hummus, go ahead and savor every bite!

    I was craving a healthy lunch last week and this Veggie Hummus Pita Sandwich totally hit the spot! I've been enjoying pita sandwiches since I was a child, when my mom would make them for us. However, rather than being slathered in mayo and loaded with processed deli meats, this version is completely vegetarian. My mother would approve.

    Veggie Hummus Pita Sandwich

    My vegetarian pita sandwiches use hummus as the condiment. This healthier alternative to mayo also brings added flavor. Most any flavor of hummus will work well, so grab your favorite.

    I load my pitas with sliced cucumbers, radish, tomatoes, and sprouts. The cucumber and radish add a great crunch, while the tomato adds some needed moisture.

    Tip: To make my pita sandwiches even better I microwave my pitas for 8 seconds or so. It softens them up and makes them slightly more pliable. This is an optional step, but a worthwhile one.

    Customize this recipe

    Feel free to customize this Veggie Hummus Pita Sandwich with whatever vegetables you are craving. Some additional options include baby spinach, thinly sliced pickled garlic, sweet peppers, pickled red onions, or even my cilantro lime sour cream for a condiment.

    Cheese isn't needed in this recipe, in my opinion. However, if you are really craving it Feta would be a good option with shredded Parmesan being my runner up choice.

    Ingredients

    • 1 pita pocket
    • 3 tablespoon hummus
    • 6 slices cucumber
    • 6 slices vine ripened tomato
    • 1 radish, thinly sliced
    • ¼ cup alfalfa sprouts

    Instructions

    • Cut pita pocket in half lengthwise to expose the inner pocket.
    • Liberally slather hummus inside each pocket, then top with remaining ingredients. Ensure they are spread out for even coverage. 
    • Serve immediately.
