Did I tell you I'm auditioning for a feature on the hit TV show, "I Shouldn't Be Alive"? Well, at least that is what my mother thinks. Truth be told, I'm doing a 30 mile solo backpacking trip through Death Valley in a couple weeks, and I couldn't be more excited. Though, in my mother's defense, there are a few ways I could die. Such as:
Bitten by snake, running out of water, getting lost, buried by an avalanche of sand, impaled by my trekking poles, abducted by aliens, choking on beef jerky, or being run over by the Wandering Stones.
Whatever my ultimate demise, please let my obituary reflect I capitulated half-heartedly.
In the rare chance my fastidious studying, map & compass skills, and overall preparation for the environment should prove life sustaining, I will survive to enjoy another Shredded Chicken Burrito with Guacamole Filling!

I love this recipe because the chicken is easily cooked in one pan, and the guacamole can be prepared as the chicken cooks. It is a pretty hassle-free supper that doesn't skimp on flavor.
I typically pair this shredded chicken burrito with my easy Spanish Rice with Salsa recipe. It takes little time to prepare and it can be used as a filling or a side! Make it once, and it will soon be a favorite staple!
I've been shredding chicken with forks, or these bear claws for ages. However, I have now been completely won over by shredding chicken with a hand mixer. Seriously. Buy a hand mixer and give it a try. It is an amazing multi-tasker!

Shredded Chicken Burrito with Guacamole Filling
Ingredients
Chicken Filling
- 2.5 lbs Chicken Breasts (about 5 breasts)
- 1 cup Salsa
- ¾ cup Tomato Sauce
- 1 tablespoon Cumin
- 2 teaspoon Chili Powder
- 1 teaspoon Kosher Salt
- 1 teaspoon Garlic Powder
- 1 teaspoon Onion Powder
- ¼ teaspoon Cayenne Pepper
Guacamole
- 3 ripe Avocados
- ½ medium Red Onion, minced
- 1 jalapeno, seeds removed and minced
- 1 Lime, juiced
- 2 tablespoon chopped Cilantro
- Salt to taste
Burrito
- Burrito sized flour tortillas
- Sour Cream
Instructions
- Add all chicken filling ingredients to a saute pan and cook on medium heat until chicken is cooked through and can be shredded with a fork.
- Shred chicken.
- While chicken is cooking prepare the guacamole.
- Warm the tortilla shells in the microwave for 10 seconds.
- Place generous scoop of chicken filling across the middle of the tortilla.
- Top chicken with a slathering of guacamole, and add a dollop of sour cream.
- Fold burrito shut and serve.
