Homemade scotcharoos are a deliciously sweet and chewy no-bake dessert bar that is a popular family favorite throughout the Midwest.
The best part is, this great recipe can be made in under 15 minutes with a handful of simple ingredients.
What are they?
Scotcharoors are easy dessert cereal bars similar to Rice Krispies treats, but instead, use a rich peanut butter and Rice Krispies mixture rather than marshmallows. These dessert bars are finished with a chocolate and butterscotch topping.

- Creamy peanut butter
- Light corn syrup
- White sugar
- Butter - Butter is optional, but does make wonderfully soft and chewy scotcharoos.
- Vanilla extract
- Rice Krispie cereal
- Semi-sweet chocolate chips - Milk chocolate chips can be used instead.
- Butterscotch chips
How to make them
Begin making this easy scotcharoo recipe by first melting together the peanut butter, corn syrup, sugar, and vanilla extract in a large saucepan or pot set over medium heat. Continue to stir the mixture as it heats.
Once the sugar dissolves and the mixture is well combined, remove it from heat as soon as it threatens to start bubbling.
Fold the Rice Krispies into the hot mixture with a rubber spatula before it cools. Then spread it evenly into a 9x13" baking dish greased with butter or non-stick cooking spray.
Prepare the topping by melting the chocolate chips and butterscotch in a saucepan set over medium low heat on the stovetop. Stir together as it melts, then spread the smooth chocolate mixture over the top of the bars.
Let the scotcharoos cool completely, then slice into bars and serve.
Storing Leftovers
Scotcharoos can be stored at room temperature covered in plastic wrap, or placed in an airtight container for up to one week.

Ingredients
- 1 ½ cups creamy peanut butter
- 1 cup light corn syrup
- 1 cup white sugar
- 1 cup butter
- ½ teaspoon vanilla extract
- 6 cups Rice Krispie cereal
- 1 cup semisweet chocolate chips
- 1 cup butterscotch chips
Instructions
- Set a large pot or saucepan over medium heat on the stovetop and combine peanut butter, corn syrup, sugar, butter, and vanilla extract.
- Stir the sugar mixture as it melts together, to prevent scorching. Continue to heat until the sugar has dissolved and everything is well combined. Remove the saucepan from heat shortly before the mixture begins to bubble.
- Stir the Rice Krispies into the peanut butter mixture while it is still hot. Then place the cereal mixture into a greased baking dish and flatten everything into an even layer.
- Add the chocolate chips and butterscotch chips to a small saucepan and set over medium-low heat. Stir the chips together as they melt. Then paint the melted chocolate mixture over the top of the Rice Krispies bars.
- Let the bars cool completely, then cut into squares and serve.
