If I were in a selling mood, I'd be willing to bet my back could fetch a pretty handsome price on Antique Roadshow. Though I'm only 33 years old, I'm reasonably certain my back is an inherited family heirloom pushing the centenarian mark. Even the mere whisper of an early bird special can threaten to throw it out of whack.
Nonetheless, I seem to have this drive built into my DNA to continually push my body as far as it will take me. Despite the sore back, I went hiking Saturday morning, for a jog Saturday afternoon, and on a long walk Saturday evening. I'm paying the price for it now, but I'd do it again.
After our hike we stopped at a healthy restaurant called Freshii and I ordered the "Pangoa", which is their healthy BBQ rice bowl. It was such a deliciously simplistic dish, comprised mainly of brown rice, black beans, and corn, with a smattering of additional fresh vegetables drizzled in BBQ sauce. It was as flavorful as it was satisfying. I liked it so much, I went home and recreated this Healthy BBQ Rice Bowl for supper too!
I eat this as a healthy entree when I am looking to make better eating choices, however it makes an exceptional side dish as well. You can easily add any type of BBQ meat to the dish for added protein, and a welcoming smoky flavor. I would recommend serving this with my authentically smoked pulled pork recipe, or my easy slow cooker pulled pork recipe.

Healthy BBQ Rice Bowl
Ingredients
- 2 cups brown rice
- 4 cups chicken broth
- 15 oz can black beans drained and rinsed
- 15 oz can corn kernels drained and rinsed
- 1 cup chopped cherry tomatoes
- 2 ripe avocados sliced
- 2 limes quartered
- ½ cup chopped cilantro
- ½ cup finely shredded sharp cheddar cheese
- BBQ Sauce
- Salt
Instructions
- Rinse brown rice in fine mesh strainer and add to sauce pan along with chicken broth and pinch of salt. Cook for ~45 minutes, or until liquid is absorbed and rice is tender.
- Turn off heat and add beans, corn, and cherry tomatoes. Gently stir together.
- Scoop into bowls for serving and top with avocado slices, lime wedge, 1 tablespoon shredded cheese, cilantro, and BBQ sauce to taste.
- Serve immediately.
