In a month’s time my 5 year old stepson will be entering his first year of Kindergarten. Where does the time go!? It seems just yesterday that I was gazing my eyes upon him for the first time as he sat in the back of my wife to-be’s car and proceeded to slowly open and re-clench his fist in a toddler’s best attempt at a wave. We didn’t know it at the time, but over the course of the next three years that little boy and I would become inseparable.

This is why I love my Cheesy Tex-Mex Rice recipe! Four ingredients and 20 minutes, and you have yourself a fantastic side dish that is as delicious as it is filling! Oh, and did I mention it’s easy on the pocketbook? Pace Salsa, Swanson Chicken broth, cheddar cheese, and rice. It’s that simple!

My Cheesy Tex-Mex Rice has the creamy comforting taste of real cheddar cheese with a tangy kick of the southwest from Pace Salsa. Using Swanson Chicken Broth instead of water infuses the rice with a deeper dimension of flavor. Never miss an opportunity to add a layer of flavor if you can, especially if it doesn’t require any extra effort!
- 1 Cup White Rice
- 2 Cups Swanson Chicken Broth
- 1 Cup Pace Salsa
- 1 Cup Shredded Cheddar Cheese
Cook rice according to package instructions.
When rice is nearing completion add in salsa and let cook till slightly incorporated with lid off.
Stir in cheese and serve.
I didn't feel like this needed salt, but salt if needed.
