My chicken salad sandwiches not only stray from a more traditional chicken salad recipe with creamy avocado replacing mayo, but it also incorporates the smoky flavor crisp hearty bacon as well. This is not your grandma’s chicken salad!

Easy Chicken Salad Hack

If you want to create this recipe with less fuss, use a rotisserie chicken. The chicken breasts on a rotisserie chicken are a little smaller, so feel free to use all of the meat from the bird. Otherwise, this is also a great recipe to use up any leftover chicken you may have in your fridge from a previous meal!

These Bacon Avocado Chicken Salad Sandwiches are loaded with crispy thick-cut bacon, creamy avocado, tender shreds of chicken, with crisp onions and celery mingled throughout!

Ingredients
  • 2 chicken breasts (cooked and shredded)
  • ½ lb Farmland Applewood Smoked Bacon
  • 3 avocados
  • 1 tbsp lemon juice
  • 1 stalk celery (diced)
  • ½ onion (diced)
  • Salt and pepper
  • 6 hard rolls or buns
Instructions
  1. Cook bacon until crisp and cut into 1/2" pieces.

  2. In medium bowl add avocados and mash with a fork till creamy. Add lemon juice, celery, onion, shredded chicken, and bacon. Mix to combine.

  3. Add salt and pepper to taste.

  4. Scoop chicken salad mixture onto hard rolls and serve.
