    It only takes 10 quick minutes to create this Balsamic Tuscan Pasta loaded with lightly sauteed onions, garlic, spinach, tomatoes and a drizzle of extra virgin olive oil and balsamic vinegar.

    10 MInute Balsamic Tuscan PastaGather around boys and girls and let me tell you a story... Once upon a time, the Fox Valley Foodie didn't know how to cook. He could have been more aptly called the Fox Valley Instant Foodie, as every meal he prepared had to be quick and easy. There would be no braising, tempering, searing, or dredging for years to come. However, there was a glimmer of hope. Armed with little more than a knife and a growling stomach, he frequently made this Balsamic Tuscan Pasta for dinner. It was a real meal accessible to even the most novice of cooks.

    It's true. I've been making this recipe for years. This was one of the first "good" meals I've ever mastered. Whether you are a novice cook or simply pressed for time, you won't find a more flavorful and easier meal!

    Ingredients

    • 8.5 oz package Barilla Penne Ready Pasta
    • 2 tablespoon extra virgin olive oil (divided)
    • ¼ red onion (thinly sliced)
    • 1 clove garlic (minced)
    • ½ tomato (chopped)
    • ½ cup firmly packed spinach
    • 1 teaspoon balsamic vinegar
    • 1 tablespoon shredded parmesan cheese

    Instructions

    • Add 1 tablespoon extra virgin olive oil to a skillet on medium heat and add sliced onions, let cook 2 minutes, then add pasta, garlic, tomato, and spinach.
    • Cook 4 minutes, stirring occasionally to ensure even cooking. 
    • Add remaining tablespoon of olive oil along with balsamic vinegar. Stir to incorporate and serve.
    • Sprinkle each plate lightly with shredded Parmesan cheese.

      Great recipe!! The idea that I don't know how to cook or I don't have time to cook are merely excuses. You certainly can make inexpensive delicious meals with just a few ingredients.
