My favorite thing about young children is the irrational tantrums they throw. Yesterday my two-year-old daughter screamed and cried because she couldn't smother her baby brother with bubble wrap while he slept. I know, I'm a mean dad. Sometimes it just feels like a win to make it to dinnertime with all of the kids still intact. On days like this, my Quick & Easy Cheesy Joes recipe is the perfect effortless meal to please everyone, even when nothing else seems simple.
I actually got this recipe from a Mennonite housewife last weekend when I was taking a class to get my trapping license. They were an incredibly gracious family who opened up their farm for the class, as well as served everyone a great meal to sustain us for the long day. These Cheesy Joes were served for lunch, and they were a big hit!
Her kids were dressed simply, hard-working, respectful, and there wasn't an Under Armor logo or Xbox in sight. Spending the weekend on their farm was a nice reminder that popular society doesn't always know best.
The only changes I made to her recipe were to cut it in half, so it is more accessible for the average family, and I also added Worcestershire for some depth.
If you ever think you need practice swallowing your pride, ask the stock boy in a busy Natural Health aisle where to find the Velveeta cheese in the grocery store. Ok, truth be told since I hail from America's Dairyland, I don't like cooking with Velveeta much. However, there are certain applications where it can't be beat. These Quick & Easy Cheesy Joes are one such example.
The reason Velveeta is recommended in this recipe is it not only melts well, but it helps incorporate the mozzarella into a sauce. Most importantly though, it allows you to reheat these Cheesy Joes the next day without the sauce breaking into an oily mess.
Using a condiment is certainly optional for this recipe. However, if you do prefer to add one, I highly recommend my Wisconsin Beer Brat Sauce. Its tangy flavor is the perfect complement to the creamy cheese.
I recommend making this in the largest skillet you own since it will brown the meat faster. I use a 12" skillet to make quick work of the hamburger. However, this recipe will work just as well in a smaller saute pan.

Quick & Easy Cheesy Joes
Ingredients
- 2 ½ lbs ground beef
- ½ onion (chopped)
- 8 oz Velveeta cheese
- 8 oz shredded mozzarella
- 1 tbsp worchestershire sauce
- salt and pepper to taste
- 8 hamburger buns
Instructions
- Brown hamburger in a large skillet along with the chopped onion. Work beef with a wooden spoon to fully crumble as it cooks.
- Once hamburger is browned add Velveeta cheese and stir to incorporate. Once Velveeta is melted add mozzarella and Worcestershire sauce.
- Add salt and pepper to taste and stir to fully incorporate all ingredients.
- Serve on hamburger buns.
