There is a spider in my house! Where is my brother when I need him?! My wife has this crazy idea since I am the man of the house I am also the chief exterminator and crusader against of all things creepy. But that isn’t what I had planned growing up. I remember once seeing a garden spider sitting in my parent’s raspberry bush, I quickly informed my older brother about the marauding invader and dispatched him to mow down the entire raspberry bush in my defense. He did so without hesitation, and to my parent’s credit they never once questioned where their raspberry bush went.
For me, stories like this conjure fond memories of summers gone by.
Playing football in the yard with my brother, late night games of Ghost in the Graveyard, racing bikes around the neighborhood… Great memories can be made any time of year, but there is just something special about the summer.
Can you believe a full month of summer is in the bag already?! It goes too fast, doesn’t it? Have you gotten a chance to get outside and grill up some food, and more importantly make some memories with your family? I grilled up some exceptionally flavorful chicken on my charcoal grill the other day and now I am left with the great conundrum of what to do with the leftovers… Enter stage left, grilled chipotle chicken salad with lime and cilantro!
Seriously, the smoky grilled goodness of chicken off the Weber and the distinctive deep flavor of chipotle peppers married together by mayo and a myriad of crunchy vegetables… it is everything that is good about summer smashed between a bun!
Some people chop the chicken for their chicken salad, while personally, I like it shredded. I’ve seen a fascinating social media video of someone shredding a large batch of chicken with a hand mixer. I think that sounds like an ingenious idea. If anyone has tried it, please let me know if it works!

Grilled Chipotle Chicken Salad with Lime and Cilantro
Ingredients
- 4 cups Shredded Grilled or Rotisserie Chicken
- 1 Celery Stalk diced
- 2 Green Onions chopped
- ¼ cup diced Red Onion
- ¼ cup chopped Fresh Cilantro
- 2 in Chipotle Peppers Adobo minced
- 2 teaspoons Adobo Sauce
- ¾ cup Mayo
- 1 tablespoon Lime Juice about half a lime
- Salt and Fresh Ground Pepper to taste
- Buns
Instructions
- Shred the chicken and place in a large bowl.
- Add vegetables to the bowl with chicken.
- In smaller bowl add wet ingredients and seasonings and combine thoroughly.
- Pour mayo mixture over shredded chicken mixture and toss to evenly coat.
- Serve on top of buns with additional cilantro as desired.

My husband used to cook for a senior center and meals on wheels so when cooking for 600-800 people you need many shortcuts and he always shreaded his chicken (,or turkey or beef ) with his bid stand mixer. The first time I saw him do it I was amazed.I think you need to cook for a crowd in order to make it worth washing the mixer though. But hey, give it a try.

I've done the chicken shredding thing with my stand mixer, but I actually kind of prefer the texture of hand pulled or hand cubed. The mixer is really easy though.
This recipe looks amazing! The next time my husband fires up the grill, I'm going to have to remember to have him grill a chicken for me so we can try this salad. Preferably with no spiders around... ick.

1) I have totally done the chicken shredding with a mixer. It is a game changer for sure. Do it! It will make you proud and then you'll crow. (Sorry, Hook quote.)
2) This summer I have finally convinced my husband that chicken salad is amazing. Of course, I always knew it was, but he had this stubborn idea that meat+salad was just wrong. Also, I hate spiders too. =/ Over the years, I somehow learned to not be scared of certain ones? And it also depends on where they are in the house. For example, those small yellowish "house" spiders - I'm not afraid of those or Daddy Long Legs anymore, but only if they're in places that are not the shower. I will not share a shower with any bug, I don't care who or what you are! All other spiders, I'm like, "HELL NO" and would probably run away and/or burn my house down if no one else is around to dispose of it for me. 🙂
