    Ingredients & Substitutions

    • Bologna - You could substitute hot dogs. However, I would really enjoy this recipe using olive loaf too. You can also make a similar sandwich spread with chicken, or ham salad.
    • Hard-boiled eggs 
    • Mayonnaise - Miracle Whip Salad Dressing can be substituted.
    • Sweet pickle relish - Chopped dill pickles can be substituted if you don't enjoy sweet pickle relish.
    • Yellow onion - Sweet onion is a perfect substitution.
    • Yellow mustard - Dijon mustard can also be used.
    • Fresh ground black pepper
    • Optional customization - Feel free to add shredded cheddar cheese or even fresh herbs like parsley and thyme.

    How to make it

    To make this old fashioned bologna salad recipe you first need to mince the bologna and eggs into small pieces using a meat grinder, or finely dice with a sharp knife.

    Next, stir together the ground bologna, eggs, mayo, sweet relish, onion, mustard, and black pepper in a large mixing bowl until the bologna mixture is well combined.

    For the best flavor, let the sandwich spread mixture meld for a couple of hours, but it can be served immediately.

    Ingredients

    • 1 pound bologna
    • 4 hard-boiled eggs (peeled and chopped)
    • 1 cup mayo
    • ½ cup sweet pickle relish
    • ¼ cup minced onion
    • 2 teaspoons yellow mustard
    • ¼ teaspoon fresh ground black pepper

    Instructions

    • Mince bologna and hard boiled eggs, then place in a large bowl.
    • Combine with mayonnaise, sweet pickle relish, minced onion, yellow mustard, and black pepper. Stir to combine.
    • Serve bologna salad spread on toasted bread, as a sandwich on simple white bread, or enjoy as a cracker topping.

      This was great. I did add 1 jalapeno seeded and diced. Just a bit of heat was great.
