Garlic Butter Roasted MushroomsConfession time. The world wide web is pretty much like one big confessional, isn't it? Well, I guess your answer to that depends on how many Millennials you are friends with on Facebook. Either way, I'm now ordaining you all priests, and you are going to hear my confession: I love jarred mushrooms. No, not the fancy marinated ones, those are nice too, but rather I'm talking about the cheap canned mushrooms you get for $0.39 in the dented food cart. There is just something wonderful about a meaty mushroom popping in your mouth, irregardless of the source!

Coffee Crusted SteakThe only acceptable penance for such a artisinal abomination is to roast a proper batch of my Garlic Butter Roasted Mushrooms. These provide the meaty mushroom flavor I crave with the sumptuous flavor of garlic butter coating every bite! These would make for a well received appetizer, or the perfect side dish to pair with your coffee crusted steak!

Garlic Butter Roasted Mushrooms RecipeI recommend using fresh ground pepper in this recipe, as it provide a much brighter flavor than the pre-ground black pepper. However, I found many pepper grinders I've used have too small of a capacity and I was constantly refilling them.  A minor hassle, but annoying nonetheless. Now I own, and highly recommend, these salt and pepper grinders which have a fantastic capacity and I've been exceptionally pleased with the grind size as well.

    Ingredients

    • 2 lbs Whole Mushrooms Baby Portobello or White are fine
    • 1 stick of butter
    • 8 cloves of Garlic minced
    • Salt and Fresh Ground Pepper

    Instructions

    • Preheat oven to 400 degrees.
    • Remove stems from mushrooms and set mushrooms on a baking sheet cap side down.
    • Place butter and garlic in microwave and cook till the butter is melted.
    • Spoon butter mixture into each mushroom and sprinkle with salt and fresh ground pepper.
    • Roast in oven for 30 minutes.
    • Mushrooms can be served immediately in a dish.

    Notes

The butter does not need to stay in the cap for serving. Dumping all the mushrooms in a serving dish and letting them sit in the garlic butter is equally delicious.
