    Crock Pot Hawaiian Chicken Sandwiches recipe

    It is hard to find an easier meal than these Crock Pot Hawaiian Chicken Sandwiches which require only 4 ingredients and no prep work!

    Last night was the first warm night of the year, and despite installing my air conditioner, I don't know if I could have slept any worse. I don't know about you, but when I sleep poorly,  I have no motivation cook an elaborate meal and find myself turning to my trusty crock pot.

    I love meals like these Crock Pot Hawaiian Chicken Sandwiches on days like this. First of all, there is almost zero prep work involved to making this. I simply dump the ingredients together in the crock pot, wiggle my fingers, do a little dance, and poof I have dinner ready! Actually, I don't really dance, it is more of an awkward shuffle, if I am being honest.

    This is a fantastic meal for leftovers too! My family doesn't typically eat it all in one sitting, so I can just reheat what I need for lunch the next day.

    There is a secret to making great Crock Pot Hawaiian Chicken. The key is to use boneless skinless chicken thighs. Thigh meat can stand up to long cooking times better than chicken breasts, resulting in more moist flavorful bites! I've tried the recipes that call for using chicken breasts and the dry chicken smacks in your teeth with each lackluster chew.

    Quite honestly, I never put chicken breasts in the slow cooker unless I plan on monitoring it closely so it can be removed as soon as it is done. Which, let's be honest, that defeats the whole purpose of using a crock pot.

    If you don't have a crock pot, you really need to buy one. They are such a life saver in the kitchen, and extremely inexpensive. I am a big believer that it is worth spending more money to get quality items, but when it comes to slow cookers, a simplistic unit will do just fine. As long as it has a high, low, and keep warm setting, you are good to go! The crock pot shown in the image is what I'd recommend.

    Ingredients

    • 3 lbs boneless skinless chicken thighs
    • 20 oz bbq sauce
    • 20 oz pineapple tidbits in a can, liquid drained
    • 1 teaspoon soy sauce
    • 12 hamburger buns

    Instructions

    • Add chicken, bbq sauce, pineapple, and soy sauce to your crock pot and heat on high for 5 hours, or until easily shredded.
    • Shred chicken with a fork once tender.
    • Serve on hamburger buns.

    Notes

    This recipe can be cooked in your crock pot on high or low. If using low, plan on a few additional cooking hours.

      These look great! I love a tasty recipe that's easy to make, especially in a crock pot. Maybe I'll toss in a habanero or 2. =)
