    Cilantro Lime Chicken Wrap

    This fresh Cilantro Lime Chicken Wrap is bursting with flavor! Sink your teeth into tender chicken, creamy avocado, tangy cilantro lime sour cream sauce and more! This is the ultimate Southwest wrap!

    Cilantro Lime Chicken WrapThere is a secret to making exceptional wraps, and no it isn't a mother's love. That only works for desserts. Wraps are too cold and calculating to be swayed by such warm and fuzzy emotions. So what is this anciently guarded secret?

    Low carb tortillas.

    I'm serious. And no, this isn't just to make the wrap healthier. It actually tastes better!

    I find using traditional wrap tortillas to typically be overly dry and firm. However, low carb tortillas have a chewier, more tender, texture that perfectly allows the tortilla to compliment the wrap's ingredients rather than competing against them.

    I discovered this a little over ten years ago when I began eating wraps at Subway. I couldn't figure out what made their wraps so much dang better than anything I could whip up in my own kitchen. I mean after all, it is just a wrap, isn't it?

    It wasn't until my wife bought low carb tortillas one day that I had my eureka moment. As soon as I sunk my teeth into the first wrap I knew this is what I've been missing.

    Cilantro Lime Chicken Wrap RecipeMy Cilantro Lime Chicken Wrap is the culmination of my favorite complimentary ingredients rolled into, what I believe to be, the ultimate wrap.

    The base of this wrap is my Cilantro Lime Chicken Breasts. I love this recipe because not only does this chicken tastes phenomenal on its own, it is also extremely versatile. I use it in a myriad of meals, and I'm sure you'll find endless uses for it too.

    You'll be squeezing some limes to make the Cilantro Lime Chicken Breasts as well as the Cilantro Lime Sour Cream Sauce. I always recommend having a lime press on hand. You will extract far more juice than squeezing it by hand, and it is not as messy. They are fairly inexpensive as well, plus they work for squeezing any citrus.

    Ingredients

    • 4, 8 " Low-Carb Tortilla Wraps
    • 1 lb cooked Cilantro Lime Chicken Breast sliced, Recipe below
    • 2 medium Avocados peeled, pit removed, and cubed
    • 4 handfuls of Baby Spinach
    • ¼ cup Pickled Red Onion Recipe below
    • ¼ cup Cilantro chopped
    • ¼ cup Cilantro Lime Sour Cream Sauce Recipe below

    Instructions

    • Divide all ingredients into four equal piles for assembly.
    • Spread inside of each tortilla with 1 tablespoon of Cilantro Lime Sour Cream Sauce.
    • Lay chicken strips in each tortilla.
    • Top chicken with avocado, baby spinach, pickled onions, and cilantro.
    • Fold one end of the tortilla to close it, then turn the tortilla 90 degrees and roll it shut.
    • Serve immediately.

    You can make this simply using sliced red onions, however I highly recommend making some pickled red onion instead. Their tangy flavor really stands out in this wrap. Plan to make it at least an hour in advance, but overnight is even better.
    The chicken can be warmed or cold. Personally I like it cold. This is a perfect meal for leftovers.
