Let's talk flavorful burgers, shall we? I grill out pretty regularly. Sometimes it is a fairly involved affair that requires me to make my signature burgers from scratch, grow my own lettuce, bake up homemade buns in a stone hearth, and raise a cow to milk for crafting artisan cheese (I may be slightly exaggerating). Other times I just want to enjoy the classic grill flavor without exerting a ton of extra energy on a scorching hot afternoon.

When I owned a gourmet burger food truck I used this Peppered Balsamic Mayo Burger Sauce on the blue cheese burger I served. The bright peppery flavor is perfect to contrast to the pungent flavor of blue cheese. Quite honestly, to this day it is the only condiment I ever use on blue cheese burgers.

Peppered Balsamic Mayo Burger Sauce
Ingredients
- ¼ cup mayo
- ¾ teaspoon balsamic vinegar
- fresh ground pepper to taste
Instructions
- Mix all three ingredients together in a small dish, taste for pepper and adjust as needed.
- You can use this right away, but the flavor is best as it melds in the refrigerator overnight. Store in airtight container.

It will last a long time, pretty much as long as the mayo expiration date.
