Whenever I bring cheesecake home I hide it from my wife initially while I crank up my favorite quirky Louis Armstrong classic. “My Baby LLLLLOVES Cheesecake!” the great Satchmo bellows through the speakers to lead into the aptly named ‘Cheesecake’ song. As soon that deep baritone voice hits my wife’s ears she smiles and turns towards me knowing that is my international anthem of ‘I brought home a cheesecake for you dear!’ Meanwhile I’m standing there with a stupid grin on my face as I bounce back and forth showing off my best jazz hands!
Cheesecake is a kind of sentimental food for my wife and I. Not only is it pretty much her favorite dessert, but I also incorporated a cheesecake into my marriage proposal to her. We shared a riverside picnic that cumulated in a cheesecake finale. When she grabbed the silver plated antique pie server she saw this:
By the time she was done reading it I was on one knee and ready for the rest of my life.
To save you any suspense, she said, “Yes.” Otherwise, that would have just been a horrible story for me to tell...
You can imagine my excitement then, when my wife and I were at Walmart and discovered Blue Bunny® Cherrific Cheesecake ice cream! That’s right, cheesecake ice cream in a clear container showing off those delicious cherry swirls! What’s not to love? I immediately knew this had the makings of a spectacular ice cream treat!
I attempted a variety of different ice cream treats using the Blue Bunny® Cherrific Cheesecake ice cream, however my favorite by far is to roll little balls of ice cream in a crumbled graham cracker crust! Then I stick it back in the freezer to firm up, and enjoy! The crumbled graham crackers saturated in butter makes an exceptionally decadent crust for these Cheesecake Ice Cream Bites. There is also no need to cook the graham mixture, as you would a traditional cheesecake crust, not only does it taste better raw, it makes for a hassle free recipe!
Cheesecake Ice Cream Bites
Ingredients
- 2 packages of Graham Crackers
- 1 ½ sticks Butter melted
- 5 tablespoon Sugar
- Blue Bunny® Cherrific Cheesecake ice cream
Instructions
- Grind the graham crackers and sugar together into a crumb using a food processor, being careful not to over process into a fine dust.
- Place graham crumbs into a bowl and pour in the melted butter and combine thoroughly.
- Using an ice cream scoop, scoop out small balls of ice cream (1-2") and drop them in the graham mixture, working one at a time.
- Roll the ice cream in the crumbs until evenly coated, roll into a ball as needed and pat with additional crumbs as necessary.
- Place on baking sheet in the freezer to firm up then place in freezer storage bag.
