Chicken Filling
- 2.5 lbs Chicken Breasts (about 5 breasts)
- 1 cup Salsa
- ¾ cup Tomato Sauce
- 1 tablespoon Cumin
- 2 teaspoon Chili Powder
- 1 teaspoon Kosher Salt
- 1 teaspoon Garlic Powder
- 1 teaspoon Onion Powder
- ¼ teaspoon Cayenne Pepper
Guacamole
- 3 ripe Avocados
- ½ medium Red Onion, minced
- 1 jalapeno, seeds removed and minced
- 1 Lime, juiced
- 2 tablespoon chopped Cilantro
- Salt to taste
Burrito
- Burrito sized flour tortillas
- Sour Cream
Add all chicken filling ingredients to a saute pan and cook on medium heat until chicken is cooked through and can be shredded with a fork.
Shred chicken.
While chicken is cooking prepare the guacamole.
Warm the tortilla shells in the microwave for 10 seconds.
Place generous scoop of chicken filling across the middle of the tortilla.
Top chicken with a slathering of guacamole, and add a dollop of sour cream.
Fold burrito shut and serve.
