Fried Cabbage with Sausage

- 12 ounces andouille sausage sliced into rounds
- ½ head green cabbage cored and chopped
- ½ medium yellow onion chopped
- 2 cloves garlic
- 4 tablespoons butter
- 2 teaspoons Dijon mustard
- 2 teaspoons Cajun seasoning
Place sliced sausage in a large skillet or saute pan set over medium high heat and cook until the sausage is nicely seared.
Reduce to medium heat and add the butter, chopped cabbage, onion, and garlic to the skillet with the sausage and stir to coat everything with the butter as it melts.
Cover the skillet and let the cabbage mixture saute for 25 minutes, or until the cabbage is tender and turning golden brown, stirring every couple of minutes as needed.
Stir in the Dijon mustard and Cajun seasonings, taste for salt, then serve.
