Meatloaf with Ritz Crackers
You can make this exceptionally flavorful meatloaf with Ritz crackers and a handful of simple ingredients you may already have on hand.

Meatloaf
- 1 ½ pounds ground beef
- ¾ cup finely crushed Ritz crackers
- ¾ cup milk
- 3 tablespoons ketchup
- 1 tablespoon Worcestershire sauce
- 1 large egg (beaten)
- ½ cup grated yellow onion
- 1 ½ teaspoons Italian seasoning
- 1 teaspoon table salt
- ½ teaspoon garlic powder
- ¼ teaspoon black pepper
Glaze
- ¾ cup ketchup
- 1 tablespoon balsamic vinegar
Preheat the oven to 350 degrees.
Crumble ground beef in a large bowl, then add all of the meatloaf ingredients. Mix until everything is well combined.
In a separate small bowl, prepare the meatloaf glaze by whisking together the ketchup, and balsamic vinegar.
Line a bread pan with aluminum foil and spread a spoonful of the glaze across the bottom. Then place the meatloaf mixture in the pan and press it to form an even loaf. Spread the remaining glaze over the top of the meatloaf.
Place the meatloaf in the preheated oven for one hour, or until the internal temperature reaches 160 degrees when tested with a meat thermometer.
Remove the meatloaf from the oven, let rest for a few minutes, then slice and serve.
Using aluminum foil makes removing the cooked meatloaf really easy. Parchment paper can also be used.
If you don't have a bread loaf pan, you can free-form the meatloaf in a baking dish, or on a rimmed baking sheet.
