- 2 chicken breasts (cooked and shredded)
- ½ lb Farmland Applewood Smoked Bacon
- 3 avocados
- 1 tablespoon lemon juice
- 1 stalk celery (diced)
- ½ onion (diced)
- Salt and pepper
- 6 hard rolls or buns
Cook bacon until crisp and cut into ½" pieces.
In medium bowl add avocados and mash with a fork till creamy. Add lemon juice, celery, onion, shredded chicken, and bacon. Mix to combine.
Add salt and pepper to taste.
Scoop chicken salad mixture onto hard rolls and serve.
