- 3 pounds red potatoes
- 3 tablespoons butter
- ½ cup buttermilk
- ⅓ cup sour cream
- 2 tablespoons minced chives (can substitute green onions)
- salt and black pepper to taste
Chop red potatoes evenly into ½" pieces.
Place chopped potatoes in a large pot and add cold salted water to cover by an inch.
Bring to a boil and cook for 10-15 minutes, or until the potatoes are easily pierced with a fork.
Drain the water completely and add butter, buttermilk, sour cream, chives, salt, and pepper. Mash to your desired texture, taste for salt, and add more as needed.
The amount of salt needed for mashed potatoes varies, so it is important to taste for it and keep adjusting until it is right. The salt should be noticeable without being "salty".
I don't recommend using a hand mixer. This tends to over-mix the potatoes and turn them gluey.
