Gourmet Grilled Cheese with Bacon

This melty gourmet grilled cheese with bacon is an upgrade from the childhood classic, but just as easy to make!

Equipment

  • Large skillet

Ingredients

  • 2 slices sourdough bread
  • 2 strips bacon
  • 3 leaves fresh basil julienned
  • 1 slice cheddar cheese
  • 1 slice provolone cheese
  • 1 tablespoon butter

Roasted Tomato

  • 2 slices tomato
  • 1 teaspoon olive oil
  • 1 dash salt

Instructions

  • Toss the tomato slices in oil, season with salt and desired seasonings and roast at 400 degrees until slightly charred.
  • Fry bacon in a pan while tomato is roasting.
  • Butter outside of the slices of bread. Layer provolone cheese, then basil, then cheddar cheese, then bacon, then tomato on the sandwich.
  • Grill in a skillet set over medium heat for 3-4 minutes, or until the cheese is melted and the exterior has browned on each side.
  • Cut in half and serve.

Notes

Raw tomato slices work well on this sandwich, but I find roasting them in your oven intensifies the flavor nicely.
