Ingredients

Meatballs

  • 1 pound ground beef (80/20 beef ideally)
  • ½ cup breadcrumbs
  • cup grated Parmesan cheese
  • 1 large egg
  • 2 teaspoons dried oregano
  • ½ teaspoon dried thyme
  • ½ teaspoon dried basil
  • 1 teaspoon kosher salt

Sauce

  • ¼ cup butter
  • 2 cloves garlic (minced)
  • 2 tablespoons flour
  • 1 cup chicken broth

Instructions

Meatballs

  • Gently crumble the ground beef into small piece and add to large bowl.
  • Add the breadcrumbs, Parmesan cheese, egg, and seasonings, then gently combine everything together.
  • Grab 2 tablespoons (smaller than a golf ball) of the meatball mixture and use your hands to roll them into a ball and place on a baking sheet
  • Place the meatballs in an oven preheated to 400 degrees for 15 minutes, or until cooked through. The time will vary depending on the size of the meatball.

Garlic Butter Sauce

  • While the meatballs are baking melt butter in a saucepan set over medium low heat and saute garlic for 1-2 minutes, or until fragrant.
  • Stir in flour and cook for an additional two minutes to cook out the flour taste, stirring continually.
  • Add chicken broth and bring the sauce to a gentle boil. Simmer until the sauce thickens to the consistency of gravy.
  • Add meatballs to the garlic butter sauce and keep warm in a slow cooker as needed.

Notes

Italian breadcrumbs can be substituted, just cut back the herbs used slightly to compensate.
For added texture, you can first sear the meatballs in a large skillet prior to baking.
Fresh lemon juice can be added to your sauce if you desire a brighter flavor.
Tip: Wet your hands prior to rolling meatballs to prevent the meatball mixture from sticking to your skin.
