Grilled Dijon Potatoes
Grilled Dijon Potatoes are par-cooked then thrown on the grill till golden brown and delicious. These make the perfect side to compliment your cookout!

- 2 lbs red potatoes, sliced ⅓" thick
- 3 tablespoon mayo
- 1 tablespoon Dijon mustard
- 1 teaspoon salt
- black pepper to taste
Bring large pot of water to a boil then add the potatoes. Par-cook till exterior is tender but inside is still slightly firm. ~5 minutes
Drain potatoes from water and add to a large bowl with mayo, Dijon, salt and pepper. Toss to coat.
Place potatoes on a grill grate directly over coals. Monitor to prevent burning and flip potatoes when turning golden brown.
Potatoes are done when exterior is cooked on both sides.
If the interior is still too firm, set them over indirect heat to continue cooking without risk of burning.
