Grilled Dijon Potatoes

Grilled Dijon Potatoes are par-cooked then thrown on the grill till golden brown and delicious. These make the perfect side to compliment your cookout!

Ingredients

  • 2 lbs red potatoes, sliced ⅓" thick
  • 3 tablespoon mayo
  • 1 tablespoon Dijon mustard
  • 1 teaspoon salt
  • black pepper to taste

Instructions

  • Bring large pot of water to a boil then add the potatoes. Par-cook till exterior is tender but inside is still slightly firm. ~5 minutes
  • Drain potatoes from water and add to a large bowl with mayo, Dijon, salt and pepper. Toss to coat.
  • Place potatoes on a grill grate directly over coals. Monitor to prevent burning and flip potatoes when turning golden brown.
  • Potatoes are done when exterior is cooked on both sides.
  • If the interior is still too firm, set them over indirect heat to continue cooking without risk of burning.
