  • 1 pound regular cut bacon
  • 1 tablespoon reserved bacon grease
  • ½ cup finely chopped onion
  • 4 tablespoons apple cider vinegar
  • 1 cup apricot preserves

Instructions

  • Cut raw bacon into one-inch pieces and cook in a skillet set over medium-high heat until crispy. Remove the crispy bacon with a slotted spoon and reserve one tablespoon of rendered bacon fat in the skillet.
  • Heat bacon fat over medium heat and saute onions until translucent.
  • Add chopped bacon, vinegar, and apricot preserves and simmer until preserves have dissolved, stirring as needed.
  • Transfer jam into a tall, cylindrical container and use an immersion blender to blend into a jam-like consistency.
  • To serve, spread this savory jam on toasted bread, crackers, burgers, or sandwiches.

Notes

This can be made in advance and stored in a pint jar in the refrigerator for future use as well. Reheat in the microwave until warmed through.
