Spicy Egg Salad

This spicy egg salad is infused with the smoky flavor of chipotles, with just the right amount of kick. Perfect for serving as a sandwich or simply eating with a fork!

Ingredients

  • 8 hard boiled eggs
  • ½ cup mayonnaise
  • 1 tablespoon minced chipotles in adobo sauce
  • 1 teaspoon Dijon mustard
  • 1 teaspoon lemon juice
  • ¼ teaspoon celery powder
  • ¼ teaspoon sweet paprika
  • salt and black pepper to taste
  • ¼ cup minced onion

Instructions

  • In a large bowl combine the mayo, minced chipotles, dijon, lemon juice, celery powder, and paprika. Once combined, mix in the onion as well.
  • Add hard boiled eggs to the bowl and break into small pieces with a fork or potato masher. Mix to coat with dressing.
  • Can be served immediately, however, the flavor is best when rested in the refrigerator for a few hours.
