Spicy Egg Salad
This spicy egg salad is infused with the smoky flavor of chipotles, with just the right amount of kick. Perfect for serving as a sandwich or simply eating with a fork!

- 8 hard boiled eggs
- ½ cup mayonnaise
- 1 tablespoon minced chipotles in adobo sauce
- 1 teaspoon Dijon mustard
- 1 teaspoon lemon juice
- ¼ teaspoon celery powder
- ¼ teaspoon sweet paprika
- salt and black pepper to taste
- ¼ cup minced onion
In a large bowl combine the mayo, minced chipotles, dijon, lemon juice, celery powder, and paprika. Once combined, mix in the onion as well.
Add hard boiled eggs to the bowl and break into small pieces with a fork or potato masher. Mix to coat with dressing.
Can be served immediately, however, the flavor is best when rested in the refrigerator for a few hours.
