- 4 turkey wings
- oil for frying
Brine
- 6 cups warm water
- ½ cup kosher salt
- 6 tablespoons brown sugar
- ¼ cup apple cider vinegar
- 4 cloves garlic
- 1 teaspoon red pepper flakes
- 1 teaspoon black pepper
- 2 bay leaf
Mix together the brine ingredients in a large bowl until the salt and sugar has dissolved.
Pour brine into a large sealable plastic bag and add turkey wings. Set in the refrigerator for 4 hours.
Remove turkey and discard the brine. Pat the wings dry.
Add enough frying oil to submerge at least half of the wing in a large skillet, and heat it to 350 degrees.
Place the turkey wings in the hot oil and fry for 14 minutes per side, or until the internal temperature reaches 165 degrees.
Remove from oil and set on paper towels to drain, then serve.
