- 1 pound Brussels sprouts trimmed and halved
- 1 pound Yukon potatoes chopped into bite-sized chunks
- 1 pound Italian sausage chopped into 1" chunks
- 2 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- 1 teaspoon oregano
- 1 teaspoon kosher salt or to taste
- ½ teaspoon garlic powder
- ½ teaspoon fresh ground black pepper
Preheat oven to 425 degrees.
Add all ingredients to a large mixing bowl and toss to combine, then spread evenly on a rimmed baking sheet lined with parchment paper.
