- 15 ounce can Black Beans (drained)
- 15 ounce can Corn Kernels (drained)
- 1 cup Cherry Tomatoes (halved)
- 2 Avocados (chopped)
- 1 Cucumber (chopped)
- 1 Red Pepper (chopped)
- ½ cup Cilantro (chopped)
- Juice of 2 Limes
- Salt and pepper
Avocado will begin to oxidize once cut up, so this is best not made in advance. If you have leftovers I recommend removing the avocado prior to storing.
