Ingredients

  • 15 ounce can Black Beans (drained)
  • 15 ounce can Corn Kernels (drained)
  • 1 cup Cherry Tomatoes (halved)
  • 2 Avocados (chopped)
  • 1 Cucumber (chopped)
  • 1 Red Pepper (chopped)
  • ½ cup Cilantro (chopped)
  • Juice of 2 Limes
  • Salt and pepper

Instructions

  • Add all ingredients to a large bowl and toss together.
  • Serve immediately.

Notes

Avocado will begin to oxidize once cut up, so this is best not made in advance. If you have leftovers I recommend removing the avocado prior to storing.
