- 3 lbs sweet potatoes (chopped into 1" pieces)
- ¼ cup olive oil
- 2 tsp kosher salt
- additional seasoning as desired
Preheat oven to 450 degrees.
Add chopped sweet potatoes to a large bowl and drizzle with olive oil and seasonings. Toss to evenly coat.
Pour sweet potatoes onto two baking sheets lined with parchment, spreading evenly to ensure even cooking.
Place in the oven for 40 minutes, flipping sweet potatoes every 15 minutes with a spatula to prevent burning.
Let cool slightly and serve.
