- 3 ripe avocados
- ½ medium red onion minced
- 1 small jalapeno minced (remove seeds)
- 1 lime juiced
- 2 tablespoons chopped cilantro
- ½ cup crumbled blue cheese
- ½ pound bacon cooked and crumbled
- salt to taste
Cut avocados in half and scoop out the flesh into a bowl, removing the pit. Add chopped onion, jalapeno, lime juice, cilantro, bacon, and blue cheese.
Mash the mixture until it is creamy with some chunks remaining.
Salt to taste.
Serve with tortilla chips.
Lime juice will help prevent the avocado from turning an unappetizing grey color so make sure you mix it in shortly after scooping out the avocado.
