- 3 lbs chicken drumsticks
- ¼ cup vegetable oil
- 2 tablespoon molasses
- Juice of 1 lime
- 1 habanero pepper stemmed and seeds removed
- 4 green onions
- 1" chunk fresh ginger
- 5 cloves garlic
- 1 tablespoon fresh thyme
- ½ teaspoon allspice
- ¼ teaspoon cardamom
- 1 teaspoon salt
- ¼ teaspoon fresh ground pepper
Combine all ingredients, minus the chicken, and place in a blender.
Puree until the mixture turns into a smooth sauce.
Place chicken into a roasting pan and pour over sauce and coat evenly.
Cover and place in the refrigerator to let marinate for at least 1 hour, up to overnight.
Preheat oven to 375 degrees.
Uncover roasting pan and bake for 50-60 minutes, turning once.
Optional: For crispier skin, broil the finished chicken for 5 minutes, roasting as needed to prevent excessive burning.
