Spam Sandwich

Simple and delicious, fry up a spam sandwich with cheddar cheese, eggs, and a thick slice of Spam on toast.

Ingredients

  • 1 slice Spam (cut into ½" thick slices)*
  • 1 tablespoon butter
  • 2 large eggs
  • 1 slice mild cheddar
  • 2 slices white bread
  • 1 tablespoon mayo
  • 1 pinch salt
  • 1 pinch ground black pepper

Instructions

  • Set skillet over medium heat and add slice of Spam. Cook until the bottom is hot and browned, then flip and repeat. Top with slice of cheese just prior to removing meat from skillet to allow it to start melting.
  • In a separate non-stick skillet melt butter over medium heat and add eggs, seasoning with salt and pepper. Cook for approximately 2 minutes, or until the bottom has set, then flip. Continue cooking until the whites are fully set, leaving the yolk runny.
  • While Spam and eggs are cooking toast the bread.
  • Assemble sandwich by adding a smear of mayo to the toast. Place eggs on bottom slice, top with Spam, cheese, and top slice of bread.

Notes

*One slice cut off the wide side of the Spam will cover the full slice of bread, otherwise, you can use two slices from the narrow side instead if you prefer. 
 
The Spam retains heat well so it is best to let the sandwich sit a minute or two prior to serving.
Tip: I personally prefer to add hot sauce to this sandwich as well.
