Homemade Brown Gravy

Homemade brown gravy is rich and silky, and perfect for slathering over everything on your dinner plate. It is a classic for a reason!

Ingredients

  • ¼ cup butter (or rendered beef drippings)
  • ¼ cup all-purpose flour
  • 2 cups beef stock (or reserved beef juices from cooking)
  • salt and and black pepper to taste

Instructions

  • Melt butter (or rendered beef drippings) in a pan over medium low heat and sprinkle in flour. Cook for approximately 4 minutes, or until flour begins to turn golden brown. Stir continually to prevent burning.
  • Starting with a few splashes at a time, slowly add beef juices to the pan, whisking to incorporate before more juice is added. Lumps will form in the gravy if too much liquid is added at once.
  • Simmer gravy for 2 minutes over medium heat, or until it reaches your desired consistency. It will thicken as it simmers.
  • Add salt and black pepper to taste and serve immediately.

Notes

Lumpy gravy can be fixed by straining it through a fine mesh strainer.
You can add more liquid to create a thinner gravy, or simmer it longer to thicken it.
If desired, additional flavorings can be added along with the meat juices. 1 teaspoon of Worcestershire or soy sauce, a sprig of fresh rosemary, thyme, or sage, or a quarter teaspoon of garlic or onion powder are all great additions.
