Healthy Tortilla BBQ Pizza
Whole wheat tortillas are piled high with lean ground beef, BBQ sauce, hearty toppings, and just the right amount of cheese to create a Healthy BBQ Tortilla Pizza that you will crave, without the guilt.
- 4 whole wheat tortillas
- 1 lb Extra Lean Beef (93/7 lean)
- ½ red onion (thinly sliced)
- 1 red pepper (sliced)
- 2 cloves garlic (minced)
- ½ cup BBQ sauce
- ½ teaspoon black pepper
- Salt to taste
- 1 cup shredded sharp cheddar
- ¾ cup grape tomatoes (halved)
Preheat oven to 400 degrees.
Add lean beef to a non-stick skillet over medium heat with salt and pepper and brown.
Add sliced onions and peppers to the skillet and cook briefly for 1 minute, then add garlic and cook for an additional minute. Finally, stir in BBQ sauce.
Place tortillas on baking sheets and spread beef mixture evenly over the four tortillas, then top each tortilla with ¼ cup of cheddar cheese and handful of grape tomatoes.
Place tortilla pizzas in oven and let bake for 10 minutes, or until cheese has melted and tortillas are crispy.
Remove from oven, cut into quarters and serve.
