- 8 Eggs (hard boiled)
- ½ cup Mayonnaise
- 1 teaspoon Yellow mustard
- 1 teaspoon Lemon juice
- ⅓ cup diced Celery
- 2 tablespoons minced Onion
- ¼ teaspoon Smoked Paprika
- salt and pepper to taste
Combine all ingredients into a bowl, except eggs, and stir to combine.
Add eggs and briefly mash with a fork or potato masher until they are broken apart but still chunky.
Stir to combine and serve.
