  • 2 lb Chicken wings cut into wingettes and drumettes (discard wing tips)
  • 2 tablespoon Baking Powder
  • ½ teaspoon Salt
  • Oil spray

Garlic-Parmesan Sauce

Instructions

Chicken Wings

  • Place the wings, uncovered, in the refrigerator for a few hours to dry out the skin.
  • Preheat the oven to 250 degrees.
  • Place wire rack on a baking sheet and lightly coat the rack with oil.
  • Using a large bowl, add the baking powder, salt and chicken. Toss to evenly coat.
  • Spread wings evenly on the baking tray with room for air to circulate, skin side up. Bake on the lower rack for 30 minutes.
  • Move to upper-middle rack and bake at 425 degrees for 50 minutes. Rotate the tray halfway through for even cooking.
  • Remove from oven and let cool for 5 minutes then toss in Garlic-Parmesan Sauce.

Garlic-Parmesan Sauce

  • Add crushed garlic and butter to a small saucepan and gently heat until butter is melted being careful not to brown butter.
  • Remove from heat, add remaining ingredients to garlic butter mixture and stir to combine.
  • Pour sauce on top of cooked wings and toss to evenly coat.
