Pre heat oven to 400 degrees
Coat potatoes with vegetable oil, dust exterior with salt, and pierce skin multiple times with a fork to allow steam to escape during cooking.
Place potatoes in oven and let bake for 50 minutes, or until fully cooked and skins have crisped. Remove from oven and let rest till cool enough to handle.
While potatoes bake cook bacon in a skillet until crisp, drain from fat and chop into bits.
Cut potatoes in half lengthwise and scoop out flesh, leaving only enough to allow the potato skin to hold its shape.
Brush interior of potato skins with melted butter and sprinkle with salt and pepper.
Turn broiler on high and place the potato skins under the broiler till flesh and edges begin to crisp. 3-5 minutes, rotating as needed to prevent burning.
Remove from oven and top each with ~2 tablespoon cheese and ~1 tablespoon bacon. Place back under the broiler until cheese has melted. 2-5 minutes, rotating as needed to prevent burning.
Top each potato skin with a dollop of sour cream and sprinkle of green onions.
Serve immediately
