Ingredients

Burger

  • 2 brioche buns
  • 1 pound ground beef 80/20 ground beef is recommended
  • 2 slices Gruyere cheese
  • 2 leaves Boston lettuce
  • salt and black pepper to taste

Quick Pickled Onion

  • ½ red onion thinly sliced
  • 1 cup apple cider vinegar
  • ½ cup water
  • 1 tablespoon sugar
  • 2 teaspoons kosher salt

Instructions

Quick pickled onion

  • Add vinegar, water, sugar, and salt to a large bowl and whisk until the sugar and salt have dissolved. Then add the onion slices, cover, and place in the refrigerator for at least one hour to pickle.

Truffle aioli

  • Combine mayo, truffle oil, minced garlic, and black pepper in a small bowl. Set the mixture in the refrigerator to allow the flavors meld while your onions are pickling.

Burger

  • Divide your ground beef into two separate rounds, ½ pound each. Press firmly to flatten them into round patties. Then dust them lightly with a pinch of salt and black pepper.
  • Set a large frying pan over medium high heat on the stovetop and place your burger patties in the hot pan. Let the burgers cook for a couple of minutes, or until the bottom of the patty develops a nice sear.
  • Flip the beef patties and add a slice of cheese to each. Then continue cooking until the patties have reached your desired level of doneness.**
  • While the burgers are cooking lightly toast the interior of your buns.
  • Assemble your truffle burgers by placing a leaf of lettuce on the bottom bun, then top with a burger patty, followed by a generous pile of pickled onions. Spread 1 - 2 tablespoons of truffle aioli on the interior of the top bun and serve.

Notes

*The thinner you slice your onion the faster it will pickle. Your pickled onion can be ready in as little as one hour, but the flavor will continue to improve if you let it sit overnight in the refrigerator.
**You can cover the skillet with a lid to help the cheese melt faster if needed.
