Shrimp Scampi without Wine

- 12 ounces linguine pasta
- 4 tablespoons butter
- 2 Tablespoons olive oil
- 1 ½ pounds large shrimp shells removed and reserved
- 4 garlic cloves minced
- ¼ teaspoon crushed red pepper flakes
- ½ cup chicken broth
- ¼ cup pasta water
- 2 tablespoons lemon juice
- ¼ cup chopped parsley
- salt and black pepper to taste
Bring a large pot of salted water to a boil and cook linguine according to package instructions.
Optional but recommended: Simmer chicken broth in a small saucepan with a handful of shrimp shells for five minutes, then strain broth to remove the shells.
Melt butter with olive oil in a large sauté pan set over medium heat, then add shrimp and cook approximately two minutes per side, or until pink and no longer translucent.
Remove shrimp from skillet and set aside. Add minced garlic and crushed red pepper flakes. Cook for one minute.
Add chicken broth, pasta water, and lemon juice to the pan and bring to a boil. Let the liquid cook until it reduces in half.
Return shrimp to the pan along with chopped parsley, then add cooked noodles and toss well to combine. Add salt and black pepper as desired.
Serve immediately.
If your noodles are done boiling before they are ready to combine with the sauce drizzle a little oil into the noodles to prevent them from sticking together as they sit.
You can serve this meal with fresh grated Parmesan cheese if desired.
