Cajun Potatoes
These Cajun potatoes add a flavorful kick to roasted potato wedges. A perfect side dish to liven up any meal!

- 4 medium Russet potatoes
- ¼ cup olive oil
- 3 tablespoons flour
- 1 teaspoon table salt
- 1 teaspoon paprika
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- ¼ teaspoon black pepper
- ¼ teaspoon cayenne pepper
- ⅛ teaspoon oregano
- ⅛ teaspoon dried thyme
Preheat oven to 450 degrees.
Slice each potato into 8 wedges and place them into a large bowl.
Add the oil, flour, and all seasoning into the bowl with potatoes and toss to evenly coat.
Place potatoes standing up on a rimmed baking sheet in a single layer, so the skin side is down, and roast for 30 minutes, or until crisp.
In place of the seasonings listed, you can substitute 1 tablespoon of store-bought cajun seasoning. Most store-bought seasoning blends have salt already added. If it doesn't have salt use 2 teaspoons of seasoning and 1 teaspoon of salt.
Leftover Cajun potatoes should be stored in an airtight container in the refrigerator for up to one week.
