Southern Fried Corn with Bacon

Southern fried corn with bacon is a sweet and smoky side dish featuring tender sweet corn kernels sauteed in bacon drippings.

Ingredients

  • 6 slices bacon
  • 2 tablespoons bacon drippings
  • 2 tablespoons butter
  • 4 cups sweet corn kernels *
  • 1 teaspoon sugar (optional)
  • 1 ½ teaspoon kosher salt
  • ½ teaspoon black pepper

Instructions

  • Lay bacon in a 12" skillet in a single layer and cook over medium-high heat until crispy. Remove the bacon and set it aside on a paper towel to drain, then chop into bite-sized chunks.
  • Reserving 2 tablespoons of bacon drippings in the pan, reduce the burner to medium heat and add butter, corn, sugar, salt, and black pepper and cook for 15-20 minutes, or until done to your liking.
  • Serve immediately in a large bowl.

Notes

*Using a cutting board, fresh corn kernels should be cut off the corn cob with a sharp knife until you have four cups of corn. The cob can be discarded. If fresh sweet corn is not currently in season you can buy frozen sweet corn in a bag at the grocery store and just thaw it out for use in this recipe.
